考虑批次的可追溯食品冷链中污染源定位与追踪

摘要:
针对食品冷链污染频现、溯源困难的问题,基于贝叶斯推断模型,采用一种考虑批次的污染源定位方法,对食品冷链中污染源定位与追踪问题进行研究,并构建食品冷链回溯与追踪系统,利用欧盟食品和饲料快速预警系统的公开数据,展示可追溯食品冷链中污染源定位和追踪分析过程。结果表明:1)食品冷链的污染传播具有可隔离性、观察样本稀疏性、路径多样性和时间不确定性等特征,传统风险源识别与传播方法的适用性不强。2)考虑批次的可追溯食品冷链污染源定位模型,计算上更为高效,不仅可降低食品冷链污染溯源的复杂性,还能提高污染源定位的精准性。3)食品冷链中出现污染时,可追溯食品冷链回溯与追踪系统根据污染源定位算法,能直观地将污染源节点及其引发的风险传播路径标识出来。据此,建议加快推进追溯系统建设,提升食品冷链中污染源定位与追踪能力,以实现从源头上消除污染,快速阻断风险传播,切实保障冷链食品安全。

Source locating and diffusion tracking of contamination in traceable food cold chain by considering batches information

Abstract:
In order to solve the challenges in tracing the frequently contaminated food cold chain, the problems of source locating and diffusion tracking of contamination in food cold chain is investigated. Based on Bayesian inference model, an efficient identification method by considering batches information is proposed, and a food cold chain tracing and tracking system is developed. By using the open data set of food cold chain provided by Rapid Alert System for Food and Feed, the processes and results of contamination source locating and tracking analysis are demonstrated. The results indicate that: The diffusion of contamination in food cold chain has many characteristics such as isolation of contamination propagation, sparsity of observation samples, path diversity and time uncertainty, which lead to the weak applicability of the traditional risk source identification and spread methods. By considering the batches information of traceable food cold chain, contamination source locating model is more efficient in calculation, which can not only reduce the complexity of food cold chain contamination traceability, but also improve the accuracy. According to the contamination source locating algorithm, the food cold chain tracing and tracking system can directly identify the contamination source node and mark out the path of risk propagation. Therefore, accelerating the construction of traceability system and improving the ability of contamination source locating and diffusion tracking in food cold chain are suggested to eliminate the risk from the origination, quickly block the risk diffusion and effectively ensure food safety in cold chain.
