基于介电特性的大豆油加热过程中品质无损检测技术的研究

摘要:
采用自制平行电极板检测大豆油加热及贮存过程中介电特征值电容和电导的变化情况,用国家标准分析方法测定其酸价、过氧化值和色度等品质指标,分析大豆油品质参数与介电参数之间的相关性。结果表明:介电常数和电导与酸价、过氧化值和色度3项品质指标之间均存在一一对应的线性相关性,较高温加热后其相关系数大于较低温加热的;经200℃高温加热后,过氧化值与电导的相关系数最高,为0.992 9,电导与介电常数相比,更适合评价油脂的品质,进一步说明了当大豆油品质劣变较严重时,更适合采用电导为指标定量描述其品质。采用介电特性参数无损检测大豆油品质在理论上具有可行性。

Nondestructive measurement of soybean oil quality with dielectric property
Abstract:
The changes of both dielectric constant and conductance were monitored with a parallel-plate electrodes during heating and storing soybean oil.Some quality parameters of acid value,peroxide value and color of soybean oil were measured with GB methods.The correlation between these values and dielectric characteristics of soybean oil was investigated.The results showed that dielectric constant and conductance were linearly correlated with acid value,peroxide value and color.The correlation coefficients were l...
