冰鲜和解冻鲫鱼的导电特性

摘要:
运用伏安法测定了不同频率下冰鲜和解冻鲫鱼的阻抗 ,分析了其阻抗随频率变化的特点。结果表明 :冰鲜和解冻鲫鱼的阻抗均随频率增大而减小 ,频率从 1kHz增大到 16kHz时 ,冰鲜 1,3,10d鲫鱼的阻抗相对变化值为 5 1% ,4 8 5 %和 33 9% ,冷冻 1,3,10d后的解冻鲫鱼的阻抗相对变化值为 16 0 % ,14 3%和 14 4 % ;冰鲜鲫鱼的阻抗相对变化值明显大于解冻鲫鱼。依据阻抗相对变化值 >2 0 %或 <2 0 %可以区分冰鲜和解冻鲫鱼。

Electric conduction property of unfrozen and frozen-thawed crucian carp
Abstract:
Property of impedances of unfrozen and frozen-thawed crucian carp was measured under different frequencies. Although impedances of both unfrozen and frozen-thawed crucian carp decreased as frequencies increased, change value of impedance of unfrozen crucial carp was evidently more than that of frozen-thawed ones. Therefore, it is feasible to differentiate unfrozen and frozen-thawed crucian carp using change value of their impedances.
